Apple Muffins

Everdyay of every week I am cooking and creating recipes multiple times a day. As you know, if you are familiar with my story and life, I am always aiming for simple recipes that nourish, satisfy and keep my kids and husband happy. Further to this, almost everything I create must be freezable!

 

I am always stocking my freezer with food to grab and go. We have our favourites, but a bit of the same/same can get very boring. So I have been on a mission to create a delicious, refined sugar free muffin recipe that I can add to my cooking catalogue.

 

I am happy to say, I have created the perfect recipe, for us!

 

These babies are so easy, freeze well and taste delicious. Great thing, it is an awesome recipe base for so many flavours. For today I share with you my favourite.

APPLE CINNAMON OAT MUFFINS
Makes 10 - Prep Time 10 minutes - Cook Time: 18 minutes

 

Ingredients:
2 x red or green apples, peeled & chopped into tiny pieces
1 x teaspoon coconut sugar
1 teaspoon cinnamon
10 medjool dates, pitted 
125 grams butter, chopped into 1cm cubes
175 grams SR wholemeal flour
50 grams rolled oats
3 eggs
1/2 teaspoon bicarbonate soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
100 grams milk
1 teaspoon white vinegar

 

Thermomix Method:
Preheat oven 180°C - Line muffin tin

  1. In a clean bowl add chopped apples, coconut sugar and cinnamon, mix well and set aside for later.
  2. Add dates to bowl, chop speed 8/5 sec
  3. Add butter, melt 2 minutes/100 deg/speed 1.5
  4. Add remaining ingredients mix 10 sec/speed 5
  5. Add 3/4 Apple mix & mix on rev/speed 4/5 seconds 
  6. Spoon into muffin tins fill 3/4 full & top with reserved apples
  7. Bake in preheat oven for 18 - 20 minutes or until cooked

Store in airtight container for 2 - 3 days or freeze individually for lunchboxes.

Food processor can be used in replacement of thermomix after you have cooked the date/butter mix.

 

Normal Method
Preheat oven 180°C - Line muffin tin

  1. In a clean bowl add chopped apples, coconut sugar and cinnamon, mix well and set aside for later.
  2. Finely chop dates, pop into saucepan. Add cubed butter, cook on a medium to high heat. Once butter starts to melt, gently stir. Continue to simmer until mixture is well combined and thick and jammy. Remove from heat and set aside.
  3. In a large mixing bowl add flour, oats, bicarb soda, baking powder & cinnamon, mix until well combined.
  4. Make a well in the centre, add butter/date mix, eggs, milk and vinegar and mix well.
    Fold through 3/4 Apple mix 
  5. Spoon into muffin tins, fill 3/4 full & top with reserved apples
  6. Bake in preheat oven for 18 - 20 minutes or until cooked
