Guilt - Free chocolate brownies

Tell me really, who does not love a slice of chocolate cake? Problem is, we all know that common store bought cakes are full of sugar, chemicals and processed rubbish. This is just not fair, so that is why I am on a mission to re-create recipes that are healthy and guilt free. Sometimes this can be very challenging, however happy to say that this recipe that I am going to share with you today, is a total success!

There is a magical base for these brownies, for sweetness I have opted for dates. Although they are naturally high in fructose, and we do need to be mindful of this, we also need to remember that this is a snack, so a small piece is ok.

This recipe is so quick & easy to whip up, and only has 5 ingredients that you can find in your pantry.

This recipe is so quick & easy to whip up, and only has 5 ingredients that you can find in your pantry.
Recipe has been created in a thermomix, however it can easily be made without, you will just need a food processor to blend up your chickpeas.

CHICKPEA BROWNIES
Makes 16 small sqaures

INGREDIENTS:
120 grams dates, pitted
100 grams water
1 tin chickpeas, rinsed & drained
40 grams cacao
2 teaspoons baking powder
1/2 teaspoon cinnamon
2 eggs
1/4 cup frozen raspberries [topping]

THERMOMIX METHOD:
Preheat oven 180°C - Line a small square tin with baking paper.

Place dates & water into bowl, cook 3 mins / 100 degrees / speed 2. Once cooked, set aside & allow to cool.
Without washing bowl, add chickpeas, cacao, baking powder & cinnamon. Mix speed 5 / 10 seconds, scrape down sides of bowl.
Add eggs, mix speed 5 / 10 seconds, scrape down bowl.
Add cooled date mixture, mix speed 5 / 10 seconds.
Pour batter into lined baking tin, top with frozen raspberries [gently press them into the batter]. Bake in preheated oven for 25 mins or until inserted skewer comes out clean. Allow to cool in tin for 15 minutes. Gently lift out & cut. 
Store in an airtight container in the fridge - Freezes well.

TRADITIONAL METHOD:
Preheat oven 180°C - Line a small square tin with baking paper.

Roughly chop dates and place into saucepan, add water. Cook on a medium heat, stirring consistently. Cook for 3-5 minutes or until dates have softened and have a mushy consistency. Set aside & allow to cool.
Using a food processor, blend chickpeas until you have a smooth paste. You can either continue to use your food processor or transfer chickpeas to bowl & mix remaining ingredients with a spatula.
Add cacao, baking powder & cinnamon, mix for 10 seconds or until mixture is well combined.
Add eggs, mix well.
Add cooled date mixture, mix until you have a well combined batter.
Pour batter into lined baking tin, top with frozen raspberries [gently press them into the batter]. Bake in preheated oven for 25 mins or until inserted skewer comes out clean. Allow to cool in tin for 15 minutes. Gently lift out & cut.
