Who would have thought that just by swapping brands, the sugar content would decrease by 50% This is proof that we need to be diligent and really great at reading labels on pre-packaged food.

My conversations with friends and clients often revolve around kids food and in particular school lunch-boxes. We all know lunch boxes are a trap for un healthy packaged foods - mums are so frustrated and confused with what to put into lunch-boxes. This is why I spend alot of time in developing a range of recipes that can offer a healthier and low sugar option for mums.

My latest recipe uses VITA BRITS. I have recently switched over to vita brits as I have a 14 year old son who LOVES them and would not hesitate in smashing 8 at one time for breakfast. This was freaking me out a little, because recently I did some label checking and in particular looked into the sugar content for WEET BIX and found that in 2 biscuits there was 1 gram of sugar. Now you might be thinking that I am over exaggerating, but when you multiply this by 4, add milk then berries and another teaspoon of honey on top, the numbers quickly add up. I need to minimise his sugar intake at every possible opportunity, because he eats many times a day, and he could easily exceed his RDI of sugar [and somedays I know he does!]. In this breakfast he would be easily consuming 1.5 teaspoons sugar.

Just by switching brands I can cut the sugar by HALF! Brilliant, I will take that!

As a comparison, VITA BRITS contains 0.1grams sugar per 2 biscuits. ALDI's WHEAT BISCUITS 0.9grams per 2 biscuits.

As a reminder, the WHO recommended daily intake of sugar guidelines;
KIDS: 3-4 teaspoons per day
ADULTS: 6-9 teaspoons per day
1 teaspoon equals 4.2 grams

A simple switch of brands, offers a great win. With this great win and new learnings, I thought I need to create a recipe that incorporates vita brits, as it is a great base and I know that my kids do love them. I have added rolled oats, chia seeds and goji berries for an extra superfood hit. These little babies are nice & crumbly, while still holding their shape, and offer a nice chewy texture. One of my biggest fans to this muesli bar is my husband!!! haha he is such a big kid :-)

VITA BRIT SUPERFOOD MUESLI BAR
Makes: 20 small squares 
Difficulty: Easy
Prep Time: 5 minutes 
Cooking Time: 15 minutes

INGREDIENTS:
6 x Vita Brits
60 grams shredded coconut
80 grams unsalted butter, cut into small pieces
80 - 100 grams honey [depending on your sweet palate]
40 grams rolled oats
1 x egg
40 grams chia seeds
20 grams dark chocolate chips
30 grams goji berries

METHOD:
[Thermomix instructions - traditional method below]
Preheat oven to 180°C - line a 20cm square tin with baking paper.
1. Add vita brits + coconut in bowl, crush - Sp 4/5seconds. Transfer to a clean bowl, set aside
2. Without rinsing thermie bowl, add butter and honey, melt - Sp 1/100 deg/2 minutes
3. Add crushed vita brit mix, rolled oats, chia seeds and egg. Mix sp 4/4 seconds.
4. Add chocolate bits, mix sp 3/3 seconds
5. Place mixture in prepared square tin, lined with baking paper, add in goji berries and using a the back of a spoon, press into tin, ensuring mixture is packed in nice and tight and goji berries are evenly mixed throughout.
- Place in preheated oven, bake for 15 minutes or until golden brown.
- Allow to cool in tin for 10 minutes, transfer to cooling rack.
- Ensure bar is completely cool before cutting into squares.
- Store in an airtight container - preferably glass jar with lid.
- Keeps well for up to 1 week [if it lasts that long!!]

TRADITIONAL METHOD:
1. Melt butter & honey on stovetop.
2. Crush vita brits with hands, add coconut and chia seeds. Add in melted butter, mix well until mix is evenly coated in butter.
3. Add rolled oats, chia seeds stir to combine evenly through mixture.
4. Make a well in the centre, add egg lightly beat then gradually combine into mixture, mix well.
5. Stir through chocolate chips and goji berries.
6. Place mixture in prepared square tin, lined with baking paper, add in goji berries and using a the back of a spoon, press into tin, ensuring mixture is packed in nice and tight and goji berries are evenly mixed throughout. Place in preheated oven, bake for 15 minutes or until golden brown. Allow to cool in tin for 10 minutes, transfer to cooling rack. Ensure bar is completely cool before cutting into squares. Store in an airtight container - preferably glass jar with lids. Keeps well for up to 1 week [if it lasts that long!!]
