I don't know any family who has not whipped up a batch of pancakes for breakfast. Commonly on weekends, pancakes are adored by every child on this planet....big statement I know, but really I have not yet met a child who does not love a pancake.
Unfortunately, pancakes are often full of sugar, covered in some form of sweetener, be it maple syrup, white sugar or I cringe when I say this 'nutella' I was a mum who often made pancakes for my babes. I thought I was doing well cooking pancakes, serving them with maple syrup, fresh banana, strawberries, lemon & sugar - you name it, we had it!!! but little did I know that I was simply overdosing my babes in sugar.....yikes!!!
Years on, I am much wiser, educated and I am forever searching and developing common recipes for families, so we can consume foods like 'pancakes' and know that they are not causing havok to our systems, promoting disease, putting stress on our immune system or sending kids into a total behaviour tail spin.
I am so excited with this recipe!! My BAKED BERRY PANCAKE is so simple, it uses 'real' ingredients and so EASY to make - in fact this is a recipe that your kids can make with little supervision.
These days when I serve pancakes, I quite often put a spread of various toppings on the table which accompanies the pancake base beautifully. Common toppings used re;
- Greek yogurt
- Toasted cinnamon buckwheat
- Coconut flakes
- Organic honey
I thought I would create a simplified version of the pancake. My recipe Berry Bake Pancake, is a perfect pancake that you can whip up on Christmas morning, pop it in your oven, go have fun & open all your presents and by the time you have done all that, your pancake will be ready to eat!

BERRY BAKED PANCAKE
Serves 6 - 8
1 3/4 cups milk of your choice - cashew, almond or cows + a splash of white vinegar to create buttermilk
1 teaspoon vanilla
2 Tablespoons to 1/4 cup coconut or raw sugar - please not you made need more sweetness if your palate is used to sugary pancakes.
2 eggs, preferably organic
2 cups organic wholemeal spelt flour
1 Tablespoon baking powder
2 - 3 cups mixed frozen berries
To serve, extra:
1. In a clean dry bowl add flour, baking powder & coconut sugar, using a whisk, mix well.
2. Make a well in the centre, add eggs, milk & whisk until all combined
3. In a greased baking dish, place frozen berries. Next pour pancake batter over the top.
4. Bake in a preheated oven for 30 minutes or until pancake is cooked through & berries are nice & gooey.
Serve with greek yogurt, a light drizzle of honey & fresh berries.
