Sweet potato bites with guacamole & bacon bits

This is another amazing recipe that is so simple to whip up healthy, delicious & has the most amazing balance of flavours. This is a great dish to take to dinner parties, when your asked to 'bring a plate' it will certainly leave lasting impressions, and will be one of those dishes that almost every can eat!!!

The guacamole is awesome as a dip too.

This recipe has been specially designed to make in the OPTIMUM Thermocook. Can easily be made in any other thermo appliance.

SWEET POTATO BITES with Guacamole & bacon pieces

Makes approx 24

INGREDIENTS:
1 x sweet potato, cut into 1cm thick slices
Salt & Pepper
olive oil
 
Guacamole:
¼ red onion
6 ripe cherry tomatoes
handful fresh coriander
2 x ripe avocados
salt & pepper
juice of 1 lemon
3 - 4 Bacon rashers, rind removed.

METHOD:
Preheat oven to 200°C
  1. Place sweet potato slices on a baking tray lined with baking paper.
  2. Drizzle with olive oil & season with salt & pepper
  3. Bake in oven for 12 minutes or until rounds are cooked through & slightly golden brown
  4. Remove from oven, allow to cool on a wire rack
  5. To make bacon bites - Cook bacon in hot frypan until brown & crispy, drain on absorbent paper, allow to cool. Chop & crush into small pieces, set aside
  6. To prepare guacamole - Place onion, coriander and cherry tomatoes in bowl, chop spd 5/3secs
  7. Scrape down sides of bowl, add and de-stoned avocados, coriander leaves, salt & pepper and lemon juice. Select CHOP, pulse 2 – 3 times until desired consistency is reached.
To build your bite – simply place a spoonful of guacamole onto cooked sweet potato round, sprinkle with bacon & garnish with coriander leaf & fine grind of pepper.
Serve immediately or store in refrigerator until ready to serve.
