Berry granita champagne cocktail

Summer time, family & friends gathering to celebrate Christmas & a nice cold champagne cocktail. We all know that strawberries are a perfect match to champagne, so when I was asked to create a Christmas themed menu to showcase the Optimum Thermocook, I instantly thought I must create a granita recipe that can easily be used as the base for a champagne cocktail - perfect!!

This granita is so easy, I love that you don't need to add sugar to the recipe as you allow the natural sweetness of the berry to shine. This granita is also perfect to eat on its own, and a great alternative to store bought ice cream that is full of preservatives & sugar.

BERRY - GRANITA COCKTAIL
Serves 4 or makes up to 10 cocktails

INGREDIENTS:
200gr frozen raspberries
100gr ice
Champagne or mineral water to serve

METHOD:
  1. Place raspberries & ice into thermo bowl blend – Spd 10/10 seconds
  2. Scrape down sides of bowl, blend again – spd 10/10 seconds or until it has reached your preferred texture

To serve, rub rim of glass with lemon juice, dip into sugar. Add 1 tablespoon sorbet into champagne flute, top with champagne, serve immediately
