Here is another wonderful recipe designed to cook in the Optimum Thermocook, this is an amazing all-in-one appliance - and it certainly does make cooking ever so easy.
This loaf is free from refined sugar, uses the sweetness from the dates, with a little added coconut sugar. It is the perfect loaf to cook when you have lots of Christmas guests and please make sure you serve it up with the whipped butter & raspberries - it truely is delightful!
For thermomix owners, this recipe can easily be followed.
DATE & WALNUT LOAF
with Cinnamon - Orange whipped Butter & raspberry garnish.
|Preheat oven to 180°C
Makes 1 loaf
2 cups (200 grams) dates
¼ cup (40 grams) coconut sugar
1 cup water
60 grams organic unsalted butter
2 cups (350 grams) self raising wholemeal flour
½ teaspoon bicarb soda
1 cup walnuts
Cinnamon – Orange butter
200 grams unsalted organic butter, at room temp
zest of 1 orange
½ - 1 teaspoon cinnamon
1 heaped teaspoon coconut sugar
TO MAKE WHIPPED BUTTER
Add butter, cinnamon, orange zest & coconut sugar to bowl, insert whisk attachment. Blend Speed 4/10 seconds. Scrape down sides of bowl and continue until all ingredients are well blended and butter is light & creamy. Transfer to serving dish
To serve loaf, spread with butter & top wish crushed raspberries. Garnish with extra orange zest.
To store loaf, wrap in cling film, pop in airtight container for up to 2 days.
