How to make brown rice flour
Simply by milling brown rice in a high speed blender or thermomix, you can quickly convert brown rice into flour to use in your baked recipes for a healthy gluten free option.


To mill in your thermomix;
Add brown rice to a clean dry bowl, mill 1 minute / speed 10
To mill in your belnder;
Add rice to clean dry jug, mill 1 minute on highest speed

Cooking Time

20 - 25 minutes

Yields

10 snack size squares

Ingredients

100 grams brown rice flour - refer to above on how to mill
8 medjool dates, pitted
130 grams unsalted butter, chopped into 1 cm cubes
2 teaspoons baking powder
1 egg
1 teaspoon vanilla
Zest of 1/2 lemon
60 grams shredded or flaked coconut, plus a little extra for top of cake

Directions

THERMOMIX METHOD:

1. In a clean bowl, add dates - chop speed 5 / 10 seconds


2. Add butter, melt - 2 minutes / 90degrees / speed 2
3. Add remaining ingredients - brown rice flour, baking powder, egg, vanilla, lemon zest and shredded coconut. Mix 10seconds / speed 5
4. Pour batter into prepared loaf tin,sprinkle top with extra coconut. Bake in preheated oven for 20 - 25 minutes oruntil inserted skewer comes out clean.

TRADITIONAL METHOD:

1. Chop dated into small pieces, add to a clean mixing bowl
2. Melt butter, add to chopped dates and mix well
3. Add rice flour, baking powder, egg, vanilla, lemon zest and shredded coconut. Using a spatula, mix until well combined.
4. Pour batter into prepared loaf tin, sprinkle top with extra coconut. Bake in preheated oven for 20 - 25 minutes or until inserted skewer comes out clean.

Notes

OPTIONS - Add a handful of sultanas for a fruity cake.
