Ricotta Pancakes

Yields

Makes approx 8 large pancakes

Ingredients

250 gr self-raising flour
pinch of salt
50 gr Caster sugar
1 Egg
300 ml milk
25 gr unsalted butter - melted
75 gr Soft Ricotta


Directions

  1. Sift the flour & salt together, then add the sugar.
  2. In another bowl, whisk the egg & milk together, then add in the flour mixture.
  3. Whisk in the butter & ricotta.
  4. Heat a non-stick frying pan [electric pans are great with kids] add a little butter. Using a ½ measuring cup scoop batter, place into hot pan and cook for 2 – 3 minutes. When bubbles appear on the surface, flip and cook for a further 2-3 minutes. Repeat cooking until all batter is used. You should have 8 – 10 pancakes.

Serve with fresh berries & maple syrup….or your favourite topping!
