1 Cup Milk - Almond, Coconut or normal
2 Strawberries, hulled
1 Medjool Date, pitted
2 Heaped Tablespoons Chia Seeds, black or white
1/3 Cup Walnuts, Slivered Almonds or Pecan Nuts
1/4 Cup Shredded, unsweetened Coconut
1/2 Teaspoon ground cinnamon
Extra Fresh Strawberries for garnishing
Organic sugar free yogurt for garnishing
1. Place milk, 2 strawberries & date in smoothie machine or blender & blitz for 1 minute until blended & creamy.
2. In a small saucepan, add chia seeds & strawberry milk. Cook on low-med heat, stirring continuously. Bring to a simmer, and allow to cook and thicken. Chia seeds will expand. After approx 5 minutes, chia pudding will be cooked. Remove from heat & place into a small bowl.
3. To toast nuts, place nuts, coconut & cinnamon in a clean dry frypan, on high heat. As pan warms, gently shake to ensure all nuts & coconut are evenly toasting and are covered in the cinnamon. Continue for 2 - 3 minutes, or until fragrant.
4. Build you chia pod - slice some fresh strawberries, pop on top of chia pudding, next add your nuts & coconut & finish with a dollop of fresh organic yogurt or Co-Yo. Enjoy!
