Pork & Quinoa Sausage Rolls

Yields

12 Sausage rolls

Ingredients

1 Green apple, cored & quartered
1 Brown onion, quartered
2 Carrots, cut into chunks
1 Clove garlic
500
grams minced pork
1 egg
1/3 Cup grated parmesan cheese
Salt & Pepper
¾ cup cooked quinoa** or brown rice

3 sheets ready made puff pastry - or home made
Egg wash
Sesame/Chia Seeds

Directions

Preheat oven to 220°C.

1. Place apple, carrots, onion, garlic into a food processor [using a cutting blade] to chop – simply pulse or mix on medium speed for approx 10 seconds, until all ingredients are roughly chopped & even consistency – don’t over process you don't want a mushy vegetable mix!
2. Next add in pork, egg, parmesan cheese & salt & pepper, mix on medium speed until mixture is well combined.
3. Transfer mixture into a mixing bowl & fold through quinoa. You are now ready to assemble your sausage rolls.
4. Take a sheet of puff pastry, cut in half & place sausage roll filling along the length of the pastry [middle of the pastry], ensuring you have at least a 2cm edge at the top of the pastry. Brush the top edge with the egg wash & roll your pastry up to encase your filling to create a long sausage roll. Cut in half, place on baking tray, seam side down. Continue this process until you have used all you pork filling.
5.Prior to baking, brush tops of sausage rolls with egg wash & sprinkle with sesame/chia seeds. Bake in pre heated oven for 25 – 30 minutes or until cooked through & golden brown.

Serve warm with a delicious green salad – Enjoy!

Notes

** To prepare quinoa - rinse well, prior to cooking. This will remove the natural soapy residue on the seeds.

Place quinoa in saucepan & add 1 cup water, with a sprinkle of salt. Place lid on pan, bring to the boil, then turn down heat to low, so quinoa is slowly absorbing water. Cook for approx 15 minutes or until all the water has been absorbed. Remove saucepan off heat, remove lid & allow to cool slightly. Using a fork, lightly fluff the quinoa. Place cooked quinoa on a large plate to allow it to cool prior to adding to sausage rolls.

Quinoa is naturally gluten-free and contains iron, B-vitamins, magnesium, phosphorus, potassium, calcium, vitamin E and fiber. It is one of only a few plant foods that are considered a complete protein

Quinoa is great to add to salads, mixed with roasted vegetables & a great breakfast option, in replace of oats!
