12 Sausage rolls
1 Green apple, cored & quartered
1 Brown onion, quartered
2 Carrots, cut into chunks
1 Clove garlic
500 grams minced pork
1/3 Cup grated parmesan cheese
Salt & Pepper
¾ cup cooked quinoa** or brown rice
3 sheets ready made puff pastry - or home made
Preheat oven to 220°C.
Serve warm with a delicious green salad – Enjoy!
** To prepare quinoa - rinse well, prior to cooking. This will remove the natural soapy residue on the seeds.
Place quinoa in saucepan & add 1 cup water, with a sprinkle of salt. Place lid on pan, bring to the boil, then turn down heat to low, so quinoa is slowly absorbing water. Cook for approx 15 minutes or until all the water has been absorbed. Remove saucepan off heat, remove lid & allow to cool slightly. Using a fork, lightly fluff the quinoa. Place cooked quinoa on a large plate to allow it to cool prior to adding to sausage rolls.
Quinoa is naturally gluten-free and contains iron, B-vitamins, magnesium, phosphorus, potassium, calcium, vitamin E and fiber. It is one of only a few plant foods that are considered a complete protein
Quinoa is great to add to salads, mixed with roasted vegetables & a great breakfast option, in replace of oats!
