Maria's Muesli Bites

10 minutes + 30 minutes freezing time

Yields

12 - 16 pieces

Ingredients

1/4 cup coconut oil

2 cups rolled oats

1 teaspoon cinnamon

1/3 cup shredded coconut

1/4 cup cranberries

1/4 cup organic honey

Directions

  1. In a large saucepan, on med-high heat, melt coconut oil.
  2. Add rolled oats, coconut & cinamon, mix well. Continue to lightly toast, tossing often. Cook for 5 minutes.
  3. Add honey, stir in well and cook on medium heat for 2 minutes. Make sure all ingredients are well covered in the honey.
  4. Finally add in the cranberries, mix well.
  5. Take a baking tray, lined in baking paper and pour contents of muesli, flatten out using the back of a spoon, to a thickness of 1cm. Place in freezer for at least 30 minutes.
  6. Remove from freezer, break into pieces & store in glass jar in refrigerator.

TOP TIP:

Can also be crushed up and used as a muesli topper on yogurt, fruit or custard - yummy💓
