Homemade Muesli

Yields

600grams

Ingredients

500 grams rolled oats
1/3 cup cold pressed coconut oil
1 Cup slivered or blanched almonds
1 cup shredded coconut
Sprinkle cinnamon (optional)

Your choice of the following fillers – 

  • Chia seeds
  • Flax seeds
  • Pepitas
  • Sunflower seeds
  • Mixed additional nuts
  • Dried fruit - cranberries/diced apricots/dates/Goji Berries

Directions

  1. Line an over tray with baking paper – add in oats & almonds. Melt coconut oil, pour over oats & toss well – ensure all the oats are well coated. If using cinnamon, apply at this stage, mix well. Bake in a hot oven 220°C for 15 - 20 minutes, tossing occasionally – you want to toast your oats & achieve a lightly golden colour! Set aside to cool
  2. Take cooled oats & almonds, and build your muesli! I build mine in a large deep sided tray, have fun adding in your ingredients & make sure you toss them well to combine all the ingredients. 
  3. Store in a airtight cereal container.


Notes

Serve muesli with your choice of milk - almond/rice/low fat & top with a dollop of greek yogurt or coconut yogurt. Finish with a generous serving of fresh fruit & drizzle of honey is needed for added sweetness.
