Healthy beef & hidden vegetable taco mince

Serves 4

Ingredients

3 Tablespoons Olive Oil

1 Brown onion, finely chopped

1 Clove garlic, finely chopped

1 Stick celery, finely chopped

400 grams premium quality, grass fed mince beef

2 Carrots, grated 

6 Mushrooms, roughly chopped (optional)

4 Teaspoons sweet paprika

2 Teaspoons ground cumin

1 Teaspoon turmeric

1 Teaspoon pink himalayan salt

Pepper

3 truss tomatoes, roughly chopped

1 Cup water, approx

1/2 Lemon

A few sprigs coriander, roughly chopped


Directions

  1. Heat olive oil in a large saucepan (with a lid) to a medium - high heat. Add chopped onions, celery, garlic. Gently sauté for 4-5 minutes or until celery & onions have softened, but not browned.
  2. Add in mince, turn heat up to high. Use the back of a Woden spoon to break down mince, stirring well, as mince cooks.
  3. Once mince has browned & is cooked through, add your grated carrots & mushrooms. Stir well & allow to cook for a further minute.
  4. Next add in your spices, stir well. Season with salt & pepper, cook spices through for another 1-2 minutes or until fragrant.
  5. Add in chopped tomatoes, stir well. Add water, enough to just cover mince & vegetables.
  6. Bring to the boil, place lid on pan, and allow to gently simmer for approx 30 minutes, or until water has been absorbed into the meat. Taste & adjust seasoning with salt & pepper.
  7. Prior to serving, squeeze the juice of 1/2 lemon over the mince, throw in coriander leaves & stir through.
Your mince is now ready to serve - Enjoy tacos with a variety of fresh salad ingredients & guacamole.
