Healthy Muesli Bar

Ingredients

300 grams Rolled Oats
1/2 cup shredded coconut
1/2 teaspoon cinnamon
8 dates
3 x eggs
2 x tablespoons chia seeds
70 grams coconut sugar
60 grams milk
80 grams dark choc chips [optional]

Directions

  1. Preheat oven to 190°C
  2. Add oats, coconut, cinnamon & dates to thermomix chop 3 sec/speed 5
  3. Add eggs, chia seeds, coconut sugar & milk, mix 15 seconds/speed 3
  4. Add choc chip, mix 5 seconds/speed 3
  5. Pop in square tin lined with baking paper, press down using back of spoon, bake in oven for 15 minutes until golden brown.
  6. Cool on wire rack, chop into square, store in airtight container in fridge for up to 7 days.
