Friday Night Fajitas


Prep Time

Ingredients

Chicken Meat Mix
* 4 chicken breasts or thighs sliced into thin strips 
* 3 capsicums (red,green & yellow), cut into stips
* 1 red onion, sliced.

Marinade
* 2 Tablespoons of olive oil
* 1 teaspoon of paprika 
* 1/2 teaspoon of cumin
* 1/2 teaspoon onion powder
* 1/2 teaspoon garlic powder
* 1/2 teaspoon of coriander
* Juice from 1 lime
* A good splash of coconut amino sauce
* A pinch of chilli powder 

Salsa
* 3 tomatoes
* 1/4 red onion
* 1 teaspoon of coriander
* A squirt of lime juice
Salt & Pepper

Guacamole
* 1 ripe avocado
* 1/4 capsicum ( I pinched a few strips from the fajita meat mix) 
* 2 tablespoons of diced red onion
* A splash of coconut amino sauce
* A squirt of lime juice
* a crack of himalayan salt and pepper

Other Ingredients
* Lettuce for tortillas
* Plain greek yogurt


Directions

Mix marinade ingredients together and coat on chicken strips, leave to marinade for at least two hours.
Cook in a hot pan fry chicken along with capsicum strips and red onion until cooked.

To make salsa:
Chop tomatoes and red onion, mix together and mix through lime juice and coriander.

To make guacamole
Mash avocado until it's a lovely chunky consistency. Mix in lime juice, coconut amino sauce and a crack of salt and pepper. Fold through diced onion & capsicum and store in the fridge until it's time to serve.
