Chocolate-Goji Raw delight

Yields

16 small squares

Ingredients

1/2 Cup Raw unsalted Cashews
1/2 Cup Rolled Oats
Pinch Salt
10 Medjool dates, stones removed
3/4 Tsp Vanilla Powder (I use loving earth) or Vanilla Extract
1 Tablespoon Raw Cacao powder
1 Tablespoon Coconut Oil
1/4 Cup Goji Berries
2 Tablespoons Flaxseeds/Chia Seeds
Shredded unsweetened coconut

Directions

1. Place cashews, rolled oats, salt, pitted dates, vanilla, cacao powder and coconut oil into food processor & pulse 5 - 6 times, then blitz on high speed for 1 minutes. Clean down sides of bowl & blitz for another 30 seconds, until mixture is crumbly & slightly sticky. [*thermomix method refer below] 

2. Add in goji berries & linseeds/chia seeds, mix for a further 30 seconds until well combined.

3. Take a loaf tin, lined in greaseproof paper, add slice ingredients, level off, and press down firmly using back of a spoon. Sprinkle with coconut & press into slice.

4. Place slice in freezer for at least 30 minutes or until solidly set. Once set, remove from pan, slice into bite size squares. Store in an airtight container, in the refrigerator. Best served cold, if left at room temperature, slice will be fudgey & soft.

THERMOMIX METHOD:

1. Place cashews, rolled oats, salt, pitted dates, vanilla, cacao powder and coconut oil, mix Speed 6 / 15 seconds, scrape down sides of bowl, then Speed 7 / 1 minute.

2. Add in goji berries & linseeds/chia seeds, mix Speed 6 / 10 seconds.

Notes

For a Gluten Free option - replace rolled oats with cashews - Dairy Free - Refined Sugar Free.
