In this recipe, the chia seeds need to be mixed with the coconut water and allow this to sit for 15 minutes to allow the chia seeds to absorb the water and become gelatinous.
2 x Tablespoons chia seeds
1/4 Cup coconut water
1/2 banana, frozen
1 to 1 1/2 Tablespoons cacao powder (more if you like it really chocolatey!)
1 x Medjool date, pitted
1/2 banana, fresh sliced
3 strawberries, chopped
1/4 Cup cacao - wild berry granola
1. Place chia seeds and coconut water in a seperate bowl, stir well. Stir well and set aside for 15 minutes or until all the chia seeds have absorbed the coconut water and they are gelatinous.
2. Using a food processor or thermomix, place chia gel, cacao powder, banana & pitted date. Blitz on high speed for 30 seconds (stopping at intervals to scrap down sides of bowl) or until well blended and creamy. [Thermomix instructions - gradually increase to speed 6/30 seconds, scrape down bowl, repeat for a further 10 secs]
3. Place chocolate chia pudding into a glass, top with slices of fresh banana, a generous sprinkle of granola and finish with a topping of freshly sliced strawberries.
Serve immediately or chia pudding can be stored in refrigerator for up to 24 hours....if it is to last that long! 😍❤️
