Cashew & Baby Spinach Pesto

Ingredients

100 grams raw cashews
1 clove garlic 
40 grams Parmesan cheese, chopped into small cubes
3 Cups (100 grams) baby spinach, washed
Juice of 1/2 lemon
1 Tablespoon extra virgin olive oil
Salt & Pepper, to taste

Directions

  1. Place cashews, Parmesan cheese, garlic in a food processor, blitz for 1 minute, until ingredients are a course & of even texture.
  2. Add remaining ingredients & blitz on high speed for a further minute until creamy & you have reached your desired texture – I like mine chunky and a little creamy!

TOP TIP - USES:

  • Stir pesto through some freshly cooked pasta - Serve with shaved parmesan and a light drizzle of extra virgin olive oil.
  • Use as a condiment to BBQ Chicken
  • Add to wraps, for a healthy tasty alternative to spreads
  • Use with hummus to make vegetarian sushi wraps
