Banana-Oat Protein Pikelets

Ingredients

1/2 cup [70 grams] Self raising wholemeal flour
1/2 cup [50 grams] rolled oats
3 medjool dates, pitted
1 banana
1/2 cup [110 grams] greek yogurt
1/2 cup [100 grams] milk
1 egg
Dash of cinnamon
1 teaspoon vanilla

Directions

THERMOMIX or FOOD PROCESSOR METHOD:

  1. Add SR flour, oats & dates to clean bowl, mix speed 5 / 20 seconds
  2. Add banana, greek yogurt, milk, egg, cinnamon & vanilla, mix speed 5 / 10 seconds. 
  3. Transfer mix to a pouring jug, heat a non stick frypan, rub base of pan with butter. Pour pikelet mix onto hot pan, cook for 2 minutes or when bubbles begin to appear, flip and continue to cook until golden brown. Cook until all mixture has been used. 

TRADITIONAL METHOD:

  1. Chop dates into small pieces, add flour and oats, stir well to combine.
  2. In a seperate bowl, mash banana & cinnamon. 
  3. Make a well in flour mixture, add mashed banana, greek yogurt, milk, egg & vanilla. Using a whisk, mix well until you have a smooth batter. You are ready to now cook your pikelets, Continue with STEP 3 ABOVE!

SERVE WITH;
Blueberry yogurt - simply mix 1/4 cup greek yogurt with a handful of frozen blueberries, mix until yogurt turns pink. Add a dash of vanilla powder for natural sweetness. Add a dollop of yogurt to a pikelet stack, drizzle with a little honey, serve with fresh berries.
