Banana, Date Spice Muffins

10 muffins

Ingredients

1 3/4 Cups Almond Meal

1/4 Cup LSA

3 Teaspoons Baking Powder

1 Teaspoon Cinnamon

1/2 Teaspoon Nutmeg

1/4 Teaspoon Ginger

1/4 Cup Coconut Oil, melted

2 Bananas

12 Medjool Dates, pitted

3 Free Range Eggs

Garnish - Optional

1 Banana

Coconut Sugar

Directions

Preheat oven to 180°C.

Add all dry ingredients to a clean bowl, mix well to combine. 

  1. In a food processor, place pitted dates, bananas, eggs & coconut oil, blitz until well combined & dates are completely processed & blended into mixture - approx 1 minute.
  2. Pour wet ingredients into dry, using a wooden spoon, mix well until combined.
  3. Scoop even amounts into greased muffin tray. Or make a banana loaf & pour into loaf tin.
  4. Garnish tops with 2 extra slices of banana & a little sprinkle of coconut sugar
  5. Bake in preheat oven for 25 - 30 minutes (muffins) or approx 40 minutes (loaf) until cooked through & golden brown.

Store in airtight container in fridge for up to 2 days, or freeze individually.
