Yields

Serves 4 (med - large serves)

Ingredients

1 x brown onion, finely chopped

1 x zucchini, finely chopped 

1 x stick celery, finely chopped

2 x carrots, finely chopped

2 x tablespoons olive oil

2 x tins cannelleni beans, drained & rinsed

2 x tins chopped tomatoes

1 x cup vegetable stock

Salt & pepper

Directions

  1. In a deep sided frypan (with lid) heat olive oil - medium heat
  2. Add chopped vegetables, lightly sauté for 2 minutes, season with salt & pepper. Place lid on pan, turn down heat & allow vegetables to sweat and continue to cook for approx 8 minutes, vegetables will soften, don't allow them to brown, adjust heat accordingly.
  3. Once vegetables have softened, add cannelleni beans, stir through.
  4. Stir through tomatoes and stock, season with pepper
  5. Place lid on pan, allow to cook for a further 35 minutes, are tomato has reduced and flavours have developed. Taste, adjust seasoning to your personal taste.
  6. Serve with hot crusty homemade focaccia or bread - enjoy!
