Apple-Blueberry yogurt cake

Yields

1 loaf - approx 10 slices

Ingredients

3 x red apples peeled and cored, chopped into bite size squares

1/4 cup blueberries (frozen or fresh)

1 1/4 cups (195 grams) Wholemeal plain flour - can use spelt flour

1 heaped teaspoon baking powder

1 teaspoon cinnamon

Pinch salt

1/3 cup (60 grams) coconut sugar

1/3 cup Greek yogurt

1/3 cup macadamia oil (or oil of your choice)

2 eggs

1/2 teaspoon vanilla


Directions

  1. Preheat oven to 180 degrees celcius. Lin a loaf tin with greasproof paper
  2. In a clean bowl add flour, baking powder, cinnamon, salt and sugar, whisk well to combine. 
  3. In a seperate bowl, add yogurt, oil, eggs and vanilla. Whisk well to combine. 
  4. Add wet ingredients to flour and mix with a wooden spoon to form a batter, taking care not to over beat.
  5. Pour half the batter into base of prepared loaf tin, top with half the chopped apple and handful of blueberries. Top with remaining batter, finish with remaining apples, and a light sprinkle of coconut sugar.
  6. Place in oven and bake for 45 mins or until inserted skewer comes out clean. 

THERMOMIX INSTRUCTIONS:

  1. Add flour, baking powder, cinnamon, salt & coconut sugar to clean bowl. Mix on speed 6/6 seconds
  2. Add remaining ingredients, mix on speed 4/15 seconds. Clean down side of bowl, mix for a further 5 seconds if required.
